Methi na Thepla

I remember the dialog from the movie '3idiots', " Ye Gujrathi dishes ke naam itne ajib kyo hote hain , 'Fafda', 'debra', 'Handvo','thepla'…bla bla….". But boss Gujju food is Gujju food. I just love it. Most favorite and frequently prepare in my house is "Methi na thepla' . There are other varieties also like palak, dudhi. But I like methi one the most. Somebody who don't know, I want to tell something that is Methi paratha tastes different than thepla. It has it's own Gujju taste.

Ingredients

Fenugreek (Methi) leaves - 1 cup (heaped)

Whole wheat flour - 2 cups

Red chilli powder - 1 teaspoon

Turmeric Powder - 1/2 teaspoon

Coriander Powder - 1 teaspoon

Cumin Powder - 1 teaspoon

Curd - 1/2 cup

Powdered sugar - 1 teaspoon

Oil - 2-3 tablespoon

Salt to taste.

Procedure
Clean and wash methi leaves. Chopped finely. Now mix all ingredients except oil. Make a soft dough with little oil. Add little water if require. Keep aside for 15 minutes. Now make lemon size balls. Then roll each ball like roti. Cook each thepla from both the side on griddle(Tava) on slow flame. Put some oil and make thepla little crisp. Serve hot with curd or Mango chunda or with any pickle.

Sattu ka paratha & Awards

Sattu ka Paratha is a typical Bihari recipe. One of my friend Sonal Dev (her In-laws are from Bihar) told me about this paratha. I found it very interesting and healthy too. Actually some days back she invited us for typical Bihari meal, Litti chokha. That was also awesome. Whenever she send the pictures and recipe I'll definitely share that with U. Sattu is fried gram flour. It is very healthy, cool and gives energy in summer. Sattu paratha is basically a stuffed paratha. Specialty of this is for stuffing, we have to add oil of mango pickle. It gives a nice taste to this paratha. Instead of giving a long description I'll directly tell you the procedure.

Ingredients

For cover

Whole wheat flour - 2 cup
Oil - 2 teaspoons
Salt - 1/4 teaspoon
Water to knead.

For Stuffing

Sattu ka aata (fried gram flour) - 1 cup
Finely chopped onion - 1
Finely chopped garlic - 2-3 cloves
Fresh coriander leaves - 1 tablespoon
Finely chopped green chilli - 1
Oil of Mango pickle - 2 tablespoon
Salt for taste.

Procedure

Knead a little hard dough for the cover with given ingredients. Mix all ingredients of stuffing in a bowl. Make small balls of the dough. Roll out the dough like a puri. Put some oil to it. Then stuff it with 2 table spoon of stuffing (you can fill the stuffing as per your choice). Close the ends of the puri at the center and make a ball. Seal it nicely so that stuffing doesn’t come out while rolling. Now roll this stuffed ball into flat paratha. Heat griddle, fry paratha using a little oil, until both sides are golden brown. Serve with curd.

Methamba

It's June and almost Mango season is ending……….. So I thought last time I will prepare Methamba for this season. It's a typical Maharashtrian side dish. The name itself describes ingredients Methi(fenugreek seeds in marathi) and Amba (Mango in marathi). Raw mango is used for this recipe. Its a sweet, sour ,spicy and with little bitternees tastes. In Karnataka it is known as 'Bhishi Uppinkai (Hot Pickle). It is very easy and quick to make. And can be store in refrigerator for several days.

Ingredients
Raw mango -1 large
fenugreek seeds (Methi dana)- 1 teaspoon
Grated Jaggery -1/2 cup
Red chilli powder -1 teaspoon
Oil - 1 tablespoon
Mutard seeds - 1/4 teaspoon
Turmeric powder -1/4teaspoon
Asafetida (hing) - a pinch
Salt to taste

Procedure
Wash and peal raw mango. Make small pieces. Don't use the seed. Heat the oil in a Kadai. Add mustard seeds and when it start spluttering add turmeric powder and asafetida. Then add fenugreek seeds and saute it till it get slightly brown. Now add raw mango pieces. Saute it so that it will get coated with the tadka. Add chilli powder, salt and 1/4 cup of water. Cover it and cook it till mango get cooked properly. Now add jaggery. You can adjust the quantity of jaggery as per the sourness of mango. Cook for another 5-6 minutes without lid. Consistency should be little thick. Methamba is ready, you can serve it with roti, paratha or bread also. Refrigerate it for several days.

I would like to contribute this recipe for cooking4allseason's Mango Mela!

Mix vegetable pickle / Bhajyanche Lonche

This is one of my favorite pickles. It’s really mouth watering. My Mother in law makes it very nice. This or any variety of pickle is her specialty. I must say, she is a great Cook. I love to prepare this pickle because it’s very easy and can be done in just a few minutes.

Ingredient:

Carrot chopped in small pieces - 1 Bowl
Green Peas - 1 Bowl
Cauliflower florets chopped in small pieces - 1/2 Bowl
Lemon - 1
Readymade pickle masala - 2 Tablespoon

For Tempering

Oil - 2 Tablespoon
Mustard seeds (Rai) - 1/2 teaspoon
Asafetida (hing) - 1 pinch
Turmeric Powder (haldi) - 1/2 Tea spoon

Procedure:

Mix Carrot, Green Peas, Cauliflower, Lemon juice and pickle masala (generally I prefer Bedekar's Readymade Pickle Masala) neatly. Now for tempering heat the oil in a small kadai, add mustard seeds, after they pop add asafetida and turmeric powder. Let it cool for some time. Add it to pickle mixture & mix it. According to your taste you can add more masala, lemon juice or salt. You can add different vegetables as per your choice. Store it in glass container. It tastes better the next day because all vegetables soak the masala properly. You can eat it with Roti, Paratha, Bhakri, and Gakar or simply with bread.
